Canteen Cook Book, The Canteen Corps Volunteers of the

When the attack on Pearl Harbor, December 7, 1941,
brought about the realization of the vulnerability of the west coast, the Red
Cross organized training in first aid, mobile units, aircraft warning, nursing,
and emergency mass feeding. In June of
1942 Canteen workers began serving hot lunches to Red Cross workers at
headquarters (Portland, Oregon assumed).
A mobile Canteen was donated by the Portland Garden Club. It served hot foods at the swimming pools
during the summer and cooperated with Civilian Defense in serving one thousand
people during a practice evacuation. On
June 7, 1943, the Red Cross Canteen was opened in a building that had
previously been the Union Station rose garden.
The Station Canteen was in continuous operation from that time until
1945. Noon meals were served daily to
100-200 workers at the Headquarters; special troop trains were met with
sandwiches, coffee, apples and cigarettes, serving an average of 450 per
train. During a rally at Willamette
Shipyard, doughnuts and coffee were served to 10,000 workers. These are just a few of the instances where
the Red Cross Canteen served during the war.
This recipe book was a “project conceived and financed by these workers
as a souvenir of their work in behalf of America’s fighting forces during World
War II.”
